Instructions
Step 1
Add milk cream and the zest and juice of one and a half lemons to a pot season with a pinch of salt then heat on medium heat stirring the whole time . We don’t want this to come to a boil we want it to slowly come up to 90 c temperature so stirring will help evenly distribute the heat

Step 2
Use a thermometer to check the temp and when it reaches 90 c cook 3-5 more minutes then take off the heat and let it sit 15 minutes
Step 3
Use a sieve and a Muslin cloth or cheese cloth then strain the liquid . Fold the cloth over the top and leave the liquid drip out for one hour ! Make sure the bowl is big enough for all the liquid . You can use the remaining liquid in pancakes or even bread !
Step 4
Remove the cheese from the cloth then put it in a sealed container ! Keep refrigerated and enjoy
