Instructions
Step 1
In a medium saucepan, heat the vegetable oil over medium heat.

Add the chopped onion and sauté until translucent, about 2-3 minutes.

Add the minced garlic and sauté for an additional 30 seconds.

Stir in the chopped fresh garden tomatoes and cook for a few minutes until they start to soften.

Stir in the rice and cook for about 2-3 minutes, stirring occasionally, until the rice is lightly toasted.

Add the chicken or vegetable broth, ground cumin, chili powder, and a pinch of salt. Stir well.

Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan with a tight-fitting lid and let the rice simmer for about 15-18 minutes, or until the liquid is absorbed and the rice is tender.

Remove the saucepan from heat and let the rice sit, covered, for an additional 5 minutes to steam.

Fluff the rice with a fork and taste for seasoning. Adjust salt if necessary.

If desired, garnish with chopped fresh cilantro before serving.
