Instructions
Step 1
Slice the eggplant into 1/2 inch thick slices
Step 2
Rub salt into both sides and lay aside on paper towels
Step 3
Put out three bowls: flour, whipped eggs, breadcrumbs
Step 4
Heat up a large pan with oil
Step 5
Dip each eggplant slice into flour, egg, and breadcrumbs before laying in the hot pan. Fry until golden and crispy on each side.
Step 6
Lay on paper towels before serving with ketchup and coriander.
