Step 1
Preheat oven to 350 degrees. Lightly coat a 2 quart casserole with nonstick spray. Place rice in the prepared casserole and pour in the boiling chicken broth. Cover and place in the oven to partially cook while preparing the rest of the ingredients. In a frying pan, melt 2 tablespoons of the butter and crumble in the sausage. Cook until no pink. Remove to a dish and cover with foil. Add the remaining butter to the frypan and saute the vegetables until the onion is translucent. Add the sausage, onion, vegetables to the partially cooked rice. Salt and pepper to taste. Cover and return to the oven and bake for 45 minutes. Makes 8-10 servings.
