Instructions

Step 1
Leave the steak out at room temperature for an hour before putting in into a preheated 300* F oven. Generously salt the steak on both sides. Place the steak in the oven and cook for 35 minutes. Times may vary depending on the thickness of the steak.
Step 2
Heat a pan with some oil on high heat. Pat the steaks dry before placing them in the pan. One the pan reaches the desired temperature, slowly place the steaks in, and sear for 1 minute on each side, or until it forms a nice crust. Once the steaks have been seared, set them aside to rest.
Step 3
While the steaks are resting, cut the onion into quarter inch rings. In a mixing bowl add the soy sauce, calamansi juice, and oyster together and mix well. In a smaller bowl prepare a cornstarch slurry with the water and cornstarch.
Step 4
Sauté the onions in the same pan as the steak. Once the onions start to soften, add the soy sauce mixture and bring to a simmer. Add the cornstarch slurry a little at a time till the sauce reaches desired thickness.
Step 5
Cut the steak into slices, and serve the onions and sauce right on top. Best served with white rice on the side.
