Instructions
Step 1
To a pot add raspberries, water, sugar and lemon juice. Cook for about 10 minutes until the raspberries have broken down. Add more water if the mixture becomes too thick.
Step 2
Sieve out the seeds and set aside.
Step 3
Next separate the eggs into egg whites and yolks.
Step 4
Mix egg yolks with 40g sugar until well combined.
Step 5
Add in softened mascarpone cheese and vanilla and mix until smooth.
Step 6
Use a hand mixer to beat the egg whites and 10g sugar until frothy.
Step 7
Mix/fold the egg white into the mascarpone mixture until combined.
Step 8
Dip ladyfingers into the syrup thoroughly and cover the base of your dish.
Step 9
Add a layer of the mascarpone mixture and then another layer of lady fingers.
Step 10
Top with more cream, ensuring a smooth top layer.
Step 11
Leave to set overnight or for 5 hours minimum.
Step 12
Dust freeze dried raspberry powder before serving and enjoy :)
