Instructions
Step 1
Start by mixing the dry ingredients together: flour, poppy seeds and baking soda.
Step 2
Now whisk together the butter, sugar and the zest from the 3 lemons. Once whisked, add the three eggs and keep whisking until homogenous.
Step 3
Incorporate the wet and the dry and add the lemon juice and the milk. Once thoroughly mixed the batter is ready.
Step 4
Preheat the oven to 180°C. Line a cake tin with some baking paper (or butter, but baking paper is easier) and drop the batter. Make sure not too much air is trapped by tapping it on the counter and cook for about 45 minutes to 1 hour in the middle of your oven (check with a toothpick or a knife, and when it comes out clean the cake is ready)
Step 5
Make the icing by mixing icing sugar and lemon juice until a thick consistency is reached (1 part lemon juice to 5 parts icing sugar more or less). Add it on to the cake once it’s cooled down and let it rest for 10 minutes before slicing!
