Instructions

Step 1
Mix dry yeast with sugar and 1 tbsp wheat flour. Add 4 tablespoons of lukewarm water and mix to a pulp. Leave to rest for 15 minutes. Mix the remaining flour with salt and bread spices in a bowl. Add the yeast mix and 280 ml lukewarm water and knead everything with the dough hook of the hand mixer for 5 minutes to form a smooth dough. Cover and leave to rise for approx. 15 minutes.
Step 2
Knead the dough on a lightly floured work surface. Then shape into a ball. Place on a baking tray lined with baking paper, cover and leave to rest for approx. 30 minutes. Preheat the oven to 450F degrees (convection: 410F degrees) . Place a casserole dish filled with water on the bottom of the oven. Bake the bread for approx. 30 minutes and leave to cool completely on a wire rack.
Step 3
Now use a sharp knife to cut out a circle of approx. 3 cm in diameter in the cooled bread. Insert a small mason jar or fill the hole directly with sea salt, if you like.
