Ingredients
4 servings

1 quartlow-sodium vegetable broth

1 x 14 ouncecan diced tomatoes
do not drain

1yellow onion
small, diced

1carrot
medium, diced

1celery stalk
medium, diced

1 cupgreen lentils

1 tablespoonolive oil
plus more for serving

2cloves garlic
minced

1 teaspoonkosher salt

1 teaspoontomato paste

1bay leaf

½ teaspoonground cumin

½ teaspoonground coriander

¼ teaspoonsmoked paprika

2 teaspoonsred wine vinegar
Instructions
Step 1
Place all the ingredients except the vinegar in a 3 1/2- to 4-quart slow cooker and stir to combine. Cover and cook on the LOW setting until the lentils are tender, about 8 hours.
Step 2
Remove the bay leaf and stir in the red wine vinegar. Ladle into bowls and top with a dollop of yogurt, a drizzle of olive oil and chopped fresh parsley or cilantro if desired.
