Step 1
Preheat your oven to 180C/170C fan / 350F, and line one or two baking trays with greaseproof paper.
Step 2
Beat together all your biscuit ingredients. Covering your mixer bowl with a testiest can help prevent clouds of icing sugar going everywhere!
Step 3
Form a smooth ball of dough. Wrap in cling film and flatten down into a disc. Pop it in the fridge for 30 minutes
Step 4
Roll your dough to 1cm thickness, it can help to do this between 2 sheets of cling film
Step 5
Cut out your biscuits using a cutter or a glass. Just make sure you have an even number
Step 6
Bake for 10 minutes until light golden brown at the edges
Step 7
Whilst they cool, Mix your icing. Add water sparingly a drop at a time to achieve a thick, Nutella-like consistency
Step 8
Spread a thin layer of jam on one biscuit, and sandwich with another
Step 9
Once complete, using a teaspoon, spread a dollop of icing on top of each biscuit and smooth out to close to the edges

Top with a jelly tot or cherry - and enjoy with a cuppa!
