Apple Strudel

This is a delicious apple strudel. I found the recipe for the dough in an old cookbook and modified it a bit, also adding in a filling and topping. I tried the dough with Greek yogurt instead of sour cream, but if you choose to do that, add more sugar. The filling is also good with about a 1/4 cup of dried fruit like dried cranberries or raisins or nuts like walnuts.

Preheat oven to 375*F. Line baking sheet with parchment paper. Combine flour and salt in large bowl.

Cut in frozen butter with pastry blender, forming pea sized chunks.

Mix in sour cream with stand mixer until well combined. Dough may look dry at first but when fully combined will feel sticky.

Refrigerate while preparing apples. Core, peel, and slice apples. Mix with cornstarch, cinnamon, sugar, ginger, and allspice.

Remove dough from fridge and roll half into a rectangle about 17x10 although the size can be adjusted as desired. Score into thirds with a knife then cut even strips on each of the two outer thirds, about 10-15 strips on each side. Fill center with half of apple filling and fold each strip one over the other. Repeat and place both strudels into prepared baking tray.

Beat egg in bowl. Brush each strudel with egg wash and sprinkle with sugar. Bake for 30-35 minutes or until golden brown.
