Instructions
Dough
Step 1
Add 400g water (or whatever liquid) to a large mixing bowl. Microwave the bowl in 10 second increments until body temperature.
Step 2
Add the salt and yeast and dissolve. Also add any oil and extra things now.
Step 3
Add 500g bread flour and mix with a large rubber paddle spatula until it comes together and you can't mix any more.
Step 4
Knead with your hands directly in the bowl, at least until smooth but really for as long as you can stomach.
Step 5
Prove for anywhere from 2 hours to 18 hours. At least prove until the dough is doubled in size, but I don't believe over-proving is possible.
Baking
Step 6
Preheat oven, with the LoafNest inside (but without the liner), at 450 F for 45 minutes.
Step 7
Insert liner, pour in dough (you'll need to scrape gently with the spatula, try not to punch it down too much), and bake for 45 minutes.
Step 8
When done, let it cool ALMOST COMPLETELY before cutting. Resist the temptation.
