Instructions

Step 1
Preheat oven to 350 degrees. DO NOT USE CONVECTION OPTION, this will overbake the bread!
Step 2
Boil raisins for 15 minutes. Drain raisins reserving liquid, add reserved maraschino cherry juice and cool to room temperature
Step 3
Cream butter, sugar and eggs until light and fluffy Add cooled raisin/cherry water and vanilla into creamed mixture, mix well. Make sure raisin/cherry water is cooled or you may cook the eggs, put in freezer for 15 minutes if needed

Sift soda, salt and 7 1/4 cups of flour together, mix into liquid mixture
Step 5
Fold in can of crushed pineapple with juice, mix thoroughly
Step 6
In another bowl combine walnuts, dates, raisins, cherries and remaining 1 cup of flour, mix to coat
Step 7
Fold fruit and nut mixture into the dough, mix thoroughly. Dough should be a little thicker than pancake batter
Step 8
Fill greased loaf pans 2/3 full Bake 350 degrees for 45 to 60 minutes or until toothpick comes out clean
Step 9
Remove from oven and cool 10 minutes in pan on a baking rack
Step 10
Turn out of pan and finish cooling on a baking rack, do not cool on flat surface
