Step 1
Turn on the oven to 150 degrees c and place a roasting pan in with 2-3 table spoons of dripping. If you don't have dripping, then olive oil is ok as well.
Step 2
Whilst the oven is heating on up, skin the garlic clove and slice into three or four slivers - depending on the size of the garlic.
Step 3
Make thin, deep cuts into the meat and place a sliver of garlic into the cut. Repeat for the remaining slivers, distributing evenly-ish across the roast.
Step 4
Once the dripping has all melted, take the pan out of the over and place the lamb in it. Baste the lamb liberally before placing it back in.
