Instructions

Step 1
1. Roast tomatillos, 3 garlic cloves, poblano pepper, serrano peppers (spicy), and 1/4 onion using your preferred method. (Air fry at 390Ā° F for 10 mins with avocado oil spray)

2. While they roast, slice the remainder of the onion and potatoes.
Step 3
3. Peel poblano pepper and remove the seeds and stem.
Step 4
4. Add the roasted vegetables to a blender with 1/2 c chicken broth, handful of cilantro, and seasonings to taste. Blend well.
Step 5
5. Grease a pan and add beef. Season with salt and pepper. Cook for 6-7 minutes.
Step 6
6. Add 2 minced garlic cloves and add sliced onions. Cook for 3 minutes.
Step 7
7. Add potatoes and salsa. Cover and cook for 25-30 mins.
Step 8
8. Divide into 4 equal servings (around 1.5 c beef) and serve with side(s) of choice - 1/2 c beans or 1/2 c of nopales.
