Ingredients
4 servings
2 tspextra virgin olive oil
1onion
large, chopped
3 clovesGarlic
chrushed
1 tspmild chilli powder
1 tblsmoked paprika
dried chilli flakes
1 tbloregano
1 tspcayenne pepper
1 tblvinegar
i used onion vinegar
brown sugar
500gbeef mince
1 tbltomato paste
2bell peppers
I used 1 red 1 yellow
100mlstock
4tomatoes
chopped
400mlkidney beans in water
drained water reserved
Instructions
Step 1
Add the oil to a large pan and heat to a medium high temperature.
Add the onion and cook till softened and slightly translucent.
Step 2
Add garlic and all other herbs and spices and sugar, stir to coat onions. Add vinegar and stir. Cook out a little.
Step 3
Once the vinegar has gone syrupy add the mince and brown. Add tomato paste, stir and cook out for a couple minutes.
Step 4
Add the bell pepper stir and cook for about 5 mins, just before it goes soft.
Step 5
Add stock and stir. Add tomatoes and stir.
Add kidney beans.
Add some reserved water from the can of beans should it seem a little dry.
Step 6
Simmer for 20 mins
Serve
