Cilantro Lime Chicken

This cilantro lime chicken is packed with a ton of flavor that everyone will love. I throw in my own twist into this recipe using some soy sauce. It's completely optional, but gives it another level of flavor! The hardest part of this recipe is waiting for it to marinate. The longer the better, but it is worth the wait!

Instructions

Step 1
Combine all marinade ingredients in a small bowl.

Step 2
Pour marinade over chicken and let marinate 30 minutes or up to 2 hours.
Step 3
Head up your cast iron over medium high heat.

Step 4
Cook your marinated chicken thighs for 7-8 minutes. Then flip and cook for another 7-8 minutes. If using the optional step below, only cook for 5 minutes and then move to Step 5.
Step 5
Optional: Spoon the soy sauce over the chicken to create an extra glaze and level of flavor. Flip and cook for another 3-5 minutes.

Remove chicken from heat and let cool for 2-3 minutes. Serve with lime wedges and cilantro as a garnish and enjoy!
