Instructions

Step 1
Clean scrub mussels. Put in saucepan add cider. Bring to boil and simmer until open. Melt butter in gravy based pan add leeks and potatoes. Cover and sweat for 15 mins adding splash of water. Remove mussels from cider and take majority out of shells. Leave a few to top dish at end. Add cider and mussel juice to leek and potatoes simmer until tender. Gently mash to thicken sauce. Add cream and cod and poach for 2/3 mins. Add mussels and heat through. Season with salt and pepper and squeeze of lemon juice. Scatter with parsley and serve with fresh bread.
