Love a good Mickey Dās Big Mac? Letās turn it into a delicious, filling and healthy salad that you can enjoy all week long! Iāve also included options to make this recipe completely plant-based and vegan. There are lots of swaps you can make to this one, but what ever you do, donāt sleep on this one ā it is SO GOOD!!!ā£

Makes 4 servingsā£

Salad:ā£
1 pound ground beef (or sub ground chicken, tofu, or plant based crumbles)ā£
1 small white onion, dicedā£
2 roma/plum tomatoes, choppedā£
4 dill pickles, choppedā£
1 head iceberg lettuce, choppedā£
1 cup cheddar cheese, shredded (or substitute for a plant-based cheese)ā£

Dressing:ā£
1 cup greek yogurt (or mayo or plant-based yogurt of choice)ā£
2 tb relishā£
1/2 cup ketchupā£
3 tb water (if needed to thin out the dressing)ā£

Prepare meat of choice and let cool. I just sautĆ©ed ground beef in a pan with salt and pepper. Next, chop all of your veggies and set aside. Prepare the dressing by whisking together all of the ingredients. Taste and adjust as needed. Now build your jars. Line up 4 mason jars and divide the dressing evenly between the 4 jars. Itās important that the dressing goes at the bottom. Next add the meat, and the remaining ingredients, adding the lettuce on top last. Cover the jars and store in the fridge. When you are ready to eat, just dump the contents of one jar into a bowl, mix, and enjoy!ā£
