Instructions

Step 1
Heat a large skillet medium high add half the oil and see your mushrooms until gold and then add zucchini and sear quickly till golden, but do not overcook. Remove from heat, add salt, pepper, the remaining oil, vinegar, grey Poupon, honey, and whisk, set aside. Plate your spinach, avocados and optional soft boiled egg, drizzle with your zucchini, mushroom vinaigrette sprinkle with fresh herbs, such as pineapple sage. Enjoy!
