Ingredients
4 servings
18 ozfrozen tortellini
2 Tbspolive oil
2chicken breast
1 tspcajun seasoning
salt
½ tsppepper
½ tspthyme
½ tspdried parsley
½ tsporegano
½ tspbasil
1 tsponion powder
½ tspcajun seasoning
½ tsppaprika
1 ½ Tbspminced garlic
½ cupbaby bella Mushrooms
sliced
1 cupspinach
1 cupheavy whipping cream
½ cupchicken broth
½ cupparmesan
½ cupmozzerella
Instructions
Step 1
Cube and cook chicken in 1 tbsp. of oil, salt, pepper and 1 tsp Cajun seasoning until done. Set chicken aside.
Step 2
To the same pan, add the remaining olive oil, garlic and each seasoning to pan.
Step 3
Cook on medium to high heat until fragrant.
Step 4
Add in mushroom and sauté until soft (about 5 minutes), stirring to prevent burning.
Step 5
Lower heat and add spinach, cooking until wilted (about 1 minute).
Step 6
Add in heavy whipping cream and chicken broth. Cook on high heat until boiling, stirring occasionally.
Step 7
Once boiling, reduce heat to medium, cover and simmer until sauce thickens. If it become too think, add water or chicken broth until reaching desired consistency.
Step 8
While sauce is simmering, cook the tortellini as directed by packaging.
Step 9
Add in cooked pasta, chicken, and cheeses. Stir until melted and blended.
Step 10
Serve and top with parsley if desired.
