Instructions
Step 1
Pour olive oil in hot pot, add onion, sweat. Add some salt. Cook until translucent.
Step 2
Add rice, stir to coat in oil, and wait for it to dry out and change to bright white. Add garlic.
Step 3
Add white wine. Start stirring continuously. Once liquid is absorbed, add broth in batches. Add some salt to season.
Step 4
Continue stirring and adding broth until it gets creamy. Taste rice to test the doneness (a little bite, al dente). Continue until done, remove from heat.
Step 5
Add butter first and stir in, then add cheese.
