Rosemary & Thyme Topped Salmon Side

An easy and healthy dinner idea that looks beautiful on the table and can be served straight from the oven. This salmon is a great main to serve alongside some big beautiful salads or vegetable sides.

Instructions
Step 1
Preheat the oven to 200°C and line a large baking tray with foil. This foil will later be used to wrap the salmon.
Step 2
In a small bowl, combine the olive oil, garlic, rosemary, thyme, lemon juice, salt and pepper.
Step 3
Place the salmon side in a large bowl and pour over the olive oil mixture, coating all sides of the salmon generously. Place the salmon on the lined tray, pouring over any remaining marinade.
Step 4
Wrap the salmon in the foil, forming a parcel, ensuring the top is covered. Use extra foil if needed.
Step 5
Place in the oven and bake for 18 minutes. Then remove from the oven, unwrap the parcel exposing the whole top side of the salmon, and place back in the oven on a top shelf on the grill setting. Cook for a further 4-5 minutes, watching carefully to prevent burning. Serve with extra lemon slices.
