Instructions
Step 1
Combine the two flours in a bowl and rub in the butter with your fingers until the mixture resembles breadcrumbs.
Step 2
Add a beaten egg and lemon juice and mix briefly and then mould together firmly with your hands.
Step 3
Flour a surface and a rolling pin and roll out the pastry until it is large enough to fill a pie dish with extra spilling over.
Step 4
Grease a pie dish and place in the pastry, removing and adding as needed so that the pastry covers the base and the sides.
Step 5
Chill covered in the fridge for an hour and then heat the oven to gas mark 5/375F/190C and bake for 10 minutes.
Step 6
Heat a drop of oil in a high sided frying pan and add 1/3 of the spinach. Fry until wilted and then add the next part and so on till it is all wilted.
Step 7
Squeeze out any liquid and then transfer to a large bowl. Add the spices and seasoning and mix well.
Step 8
Add the cottage cheese and 4 eggs and mix well before pouring into the pastry and spreading out evenly.
Step 9
Return to the oven at gas mark 5/375F/190C and bake for 30 minutes before serving.
