Instructions

Prepare Pie Dough

Step 1
Combine pastry flour, all purpose flour, salt, and cold butter into food processor. Pulse in food processor until a crumble consistency. (do not over mix dough and try to keep clumps of butter in tact for flaky dough)
Step 2
Incorporate ice cold water slowly into dough, while pulsing mixture in food processor until dough has slightly loose crumble consistency
Step 3
Remove dough from processor and gently mold 2 equal size disks. Wrap in saran wrap. Place in fridge for 1 hour (up to 24 hours)

Prepare Meat Pie Filling

Step 4
Melt half a stick on butter (2 oz) in a pan
Step 5
Add chopped onions and celery into pan. Sauté until translucent
Step 6
Add ground beef and meat until no longer pink
Step 7
Peel potatoes and bring to boil. Once fork tender, remove from water and mash in separate bowl until slightly chunky. Add to meat mixture
Step 8
Combine ground allspice, clove, cinnamon, and nutmeg into meat mixture
Step 9
Add beef broth into meat mixture. Cook till mixture has mashed potato consistency. Cool to room temperature

Make the meat pie

Step 10
Remove dough disks from the fridge. Roll out 1/8 inch thick pie crusts (make sure rolled dough is larger that pie tin). For this pie, roll dough larger than 9 inches to ensure you have enough dough to crimp edges

Roll bottom dough around rolling pin to help easily roll over pie tin
Step 12
Add meat mixture into pie. Fill up to rim and smooth until flat
Step 13
Roll out top of pie crust and place on top of pie. Create a vent hole to allow steam to leave pie and avoid exploding in oven. You can you a small cookie cutter to create a design or place small slits with a knife at top of pie

Crimp pie crust using fingers for pinch the bottom layer of dough and top later of dough, around the whole pie
Step 15
For excess pie crust hanging over top of rim. Either use knife or pastry scissors to cut excess dough level with rim of pie

Make egg wash. Scramble 2 whole eggs in separate bowl. Bush egg wash on all of the top of the meat pie

Bake Meat Pie

Preheat oven to 375F

Bake meat pie in over for 45-60 min (keep eye on pie to ensure that top of pie is not burning

Remove pie for serving. Let cool to room temperature
