Instructions

Step 1
Measure the water, olive oil & yeast and mix them together.
Step 2
Add the salt to the flour then add the wet mixture to the flour.
Step 3
Knead the dough for 10 minutes using the mixer or knead by hand if prefered.
Step 4
Oil your hands pick up the dough & shape the dough into a smooth ball covered lightly in oli. Lightly oil the bowl and cover. Let the dough rise for 40mins, until doubled in size.

Prepare your toppings. If using fresh herbs coat them in oil first so they impart their flavours more easily to the bread

Prepare you baking tin by coating it thickly in butter & olive oil.

Step 7
Knock the air from the dough & gently shape it to a rectangle big enough to fit your baking tin. Place it in gently & use your fingertips to dimple the dough.
Step 8
Drizzel extra virgin olive oil over the dough, then add your toppings. Place in a proving bag for 45 minutes until doubled in size. Preheat your oven to 200°C in the last 10 mins of the proving time.
Step 9
Add a sprinkle of sea salt & ground pepper then bake for 20 - 25 minutes until golden brown. Take out of the oven and drizzel again with extra virgin olive oil. Take out of the baking tin onto a cooling rack. Leave to stand for at least 10 mins before eating.
