Instructions
Step 1
In a bowl, combine water, sugar and yeast. Mix well and leave for 10 minutes.
Step 2
Then add salt, melted butter and flour. Start mixing with the spatula, then with hands. Knead the dough until it has an elastic feeling and forms a ball that doesn’t stick to the side of the bowl anymore. It’s about 10 minutes. (you can use a stand mixer if you have, it will be much easier)
Step 3
When dough is ready, grease the bowl with 1tbsp olive oil and place in the dough. Cover with towel and leave in a warm place to rise for about 50 minutes-1 hour.
Step 4
When ready, grease the table with remaining olive oil, knead the dough a little and divide it into 4 equal parts.
Step 5
To shape the pretzel, take one piece of dough, roll it into a 60 cm -long rope. Make sure that the middle is a bit thicker than the ends.
Step 6
Next, take either end of the rope in your fingertips and draw them together, so the dough forms a U shape.
Step 7
Twist the ends of the rope together twice.
Step 8
Bring the twisted end toward yourself and fold it down onto the bottom curve. Now this is a pretzel.
Step 9
Transfer it to the baking tray, lined with parchment and greased with a bit of oil. When all your pretzels are ready using a sharp knife make a cut horizontally across its base and freeze them for 15 minutes.
Step 10
Meanwhile, preheat the oven to 230C.
Step 11
In a large pan, bring water to a boil and add baking soda.
Step 12
Put one pretzel at a time to the boiling water and cook for 30 seconds.
Step 13
Transfer boiled pretzels to the baking tray. Brush with egg yolk mixed with 1tbsp water and sprinkle the pretzels with coarse salt and sesame seeds if desired.
Step 14
Bake for 15 minutes, or until golden brown.
