Instructions
Step 1
Boil pasta
Step 2
Reserve pasta water
Step 3
Return drained pasta to pot
Step 4
Add cheese and butter and 4 tbsp pasta water and return pot to low heat
Step 5
Use tongs toss and stir for 30 secs. Turn off heat, cover pot, let pasta sit 1 min
Step 6
Toss and stir pasta constantly again until sauce coats pasta and cheese is melted about 30 secs. (If sauce is too thick, thin as need with 1 tbsp pasta water at a time
Step 7
Transfer pasta to bowl and sprinkle more cheese and pepper if needed
