Ingredients
4 servings
20 ozbaby potatoes
assorted, cut into bite-sized pieces
¼ cshredded parmesan cheese
2 clovesgarlic
roughly chopped
2 Tbspbutter
salt
to taste
1/4 to 1/2 c fresh herbs
Instructions
Step 1
Set oven to 425°F. Pick and wash an assortment of herbs. Remove stems and finely chop. You should end up with a large handfull, somewhere between 1/4 to 1/2 cups, once it is all chopped. Roughly chop the garlic.
Step 2
Melt butter. Wash and chop potatoes into bite-sized pieces. Combine all ingredients and spread out on a baking sheet.
Step 3
Roast until done, approximately 25-30mins, turning every 10mins to ensure even browning.
