Place the beef slices on the plate. Pour a first dose of vinaigrette, previously prepared with lemon, oil and salt. Sprinkle arugula and thinly sliced parmesan cheese on top, and pour the remaining vinaigrette. Place in the refrigerator for 10 minutes, then serve.
