Instructions

For the spread:

Step 1
In a hand chopper or food processor, add the drained jar of sun dried tomatoes and pulse until smooth. Set aside.

For the sandwich:

Step 2
When you’re ready to make your sandwich, spread some of the sun dried tomato purée onto the top and bottom of the warmed bread. Add a drizzle of olive oil and balsamic vinegar.
Step 3
Add sliced soppressata salami to the bottom, not overfilling, but adding approximately 6-8 slices.
Step 4
Add a few thin slices of cheese on top of the salami, then adding the mixed greens on top.
Step 5
Then, simply close the sandwich, and slightly press down to crack the baguette crust a bit. This sandwich packs well, but you’ll want to eat it right away.
