Step 1
Beat together the butter and sugar with an electric mixer. Add the eggs and vanilla and beat until well combined. Stir in the pineapple.
Step 2
In a bowl, whisk together the flour, baking powder, baking soda and salt. Add the dry ingredients to the wet ingredients until just combined.
Step 3
Pour the batter into a 9x5-inch loaf pan that's been sprayed with nonstick cooking spray. Bake in a preheated 350-degree F oven for about 1 hour or until a toothpick comes out clean.
Step 4
Cool about 10 minutes before removing from the pan to cool completely.
