Ingredients
4 servings
1 x 400gchopped tomatoes tin
1 x 400mlcoconut milk tin
1 x 240gchickpeas tin
drained
240gdry basmati rice
1brown onion
medium
4garlic cloves
80gfresh spinach
½ Tbspolive oil
2 Tbspgaram masala
1 tspmild curry powder
1 tspcumin
½ tspcoriander
½ tspsmoked paprika
½ tspsalt
½ tsppepper
fresh coriander
to garnish
0.5fresh lime
Instructions
Step 1
1. Dice the onion and garlic
Step 2
2. Add the olive oil into a medium hot pan with the diced onions
Step 3
3. Fry for a few minutes before tipping in the chopped tomatoes and seasoning with salt and pepper.
Step 4
4. Stir and simmer on medium for about 10 minutes
Step 5
5. Then add the remaining seasoning and the coconut milk and stir before adding in the drained tinned chickpeas.
Step 6
6. Add in the spinach and stir through and simmer for a further 5-10 mins until the curry has reached your preferred consistency
Step 7
7. Squeeze in the fresh lime before serving into four equal portions with cooked basmati rice and top with some fresh coriander
