Step 1
In a hot pan add oil and cook down onion and garlic
Step 2
Add carrot
Step 3
Add Cauliflower
Step 4
Add Spices
Step 5
Add canned tomato
Step 6
Add chickpea and coconut milk
Step 7
Add sweet corn and flavor with pink salt and soy sauce
Step 8
Cook Jackfruits in hot oil and flavor with soy sauce a little bit
Step 9
Add Jack fruits into curry pot...stir a little bit then turn off the heat
Step 10
Add chopped coriander and squeeze of lime
Step 11
Serve in a bowl with Black rice and sprinkle on crispy garlic and more coriander
