Instructions
Step 1
Using a whisk, mix 4 grams agar agar powder and 1 cup coconut water in a small saucepan. Over medium-high, heat the mixture until it begins to boil.

Step 2
Whisk in 2 tablespoons sweetener. Reduce to medium heat and whisk in the rest of the ingredients. Let cook for another minute until the mixture is just about to boil again.

Step 3
Remove saucepan from heat and set aside, let cool for for 3 minutes.
Pour into a heatproof container and refrigerate for at least 2 hours to let the haupia set.
Step 4
In a pot, add tapioca pearls, water, coconut meat, coconut water, and monkfruit. Turn the heat to a boil over low heat and let it cook for 10 minutes. Constantly stir to prevent it from sticking.

Mix together the pureed coconut meat, one bag of starch (reserve the remaining half bag), and sugar to form the batter for the dumplings
Step 6
Drop the batter into the boiling liquid by the teaspoonful. The dumplings will float to the top when done. If the dumplings break apart during cooking, add a couple of tablespoons more starch to the dumpling mixture.
Step 7
After 10 minutes, put the lid on, turn the heat off, and let it sit for 3 minutes.
Step 8
Drain the tapioca pearls and run them under cold water. If you are serving right away, set the pearls aside. If not, leave them in cold water until ready to serve.
Step 9
Cut fresh mangos into cubes. Add half of the mangoes in a blender, aswell as the cream of coconut and coconut milk into the blender and blend until smooth.
