Instructions

Step 1
1. Add 3 cups nopales, 1/4 white onion, 3 garlic cloves, tomatillo peels, and 1 tbsp salt to a pan.
Step 2
2. Cook for 10-13 minutes, stirring often. The nopales will release “baba” (slime) as they cook. Turn off the heat when they have changed to a dark green color.
Step 3
3. Remove the onion, garlic, and peels. Rinse the nopales under cold water until there is no “baba.” Put to the side.
Step 4
4. Chop tomatoes, 3/4 of the onion, jalapeños, cilantro, and nopales.
Step 5
5. Add 3 cups of chopped nopales, 1/4 white onion, 3 garlic cloves, and 1 tbsp salt to a pan.
Step 6
6. In a bowl, add the tomatoes, onion, cilantro, jalapeño, and nopales in a bowl.
Step 7
7. Add juice of the limes and salt to taste. Combine well and store in the fridge for a minimum for 30 minutes.
