Instructions
Step 1
Put the chicken in a large pot. Add the carrots, celery, onion, garlic, parsley, bay leaf and thyme sprigs.









Step 2
Add all of the water into the pot and place over medium-high heat. Make sure the water covers everything by at least an inch.

Step 3
Bring to a boil and reduce heat to medium-low. Simmer for 3 hours.
Step 4
Place the colander over a large bowl. Use cheesecloth to line the colander or use a mesh sieve to strain the broth into the bowl. Let it cool to room temperature.



Step 5
Transfer the broth to storage containers and refrigerate.
