Step 1
Cover the bottom of the pot with olive oil and butter (just enough to have a thin layer covering the whole bottom of the pot). Heat over medium-high heat.
Step 2
Once oil is shimmering/butter melted, add mirepoix mixture (onions, celery, carrots) and sauté until tender (5ish minutes?) Season with a few heavy pinches of salt while sautéing.
Step 3
Add 1 carton of chicken broth and 2 tbs 21 seasoning salute spice blend. Bring to simmer.
Step 4
Add chicken breasts. Cover with lid and cook until chicken is cooked through (20ish min?)
Step 5
Take out cooked chicken and shred with forks.
Step 6
Put chicken back in pot. Add 1ish cup of harvest grains blend and bring to a soft simmer. Let cook 10ish minutes until grains are cooked through/al dente. **I sometimes add some more chicken broth at this point if the grains have soaked up most of the broth and it’s too thick. Just eyeball it.
Step 7
Add a few handfuls (2-3) of chopped kale and simmer until wilted.
Step 8
Taste and add salt and 21 seasoning salute as needed.
