Instructions

Step 1
In a bowl, whisk the eggs until well beaten.
Step 2
Add water (the ratio of water : egg is 1.5 : 1.0)to the beaten eggs and whisk until combined.
Step 3
Add salt to the egg mixture and stir until dissolved.
Step 4
Use a spoon to remove any bubbles on the surface.
Step 5
Cover the dish with aluminum foil or Cling film.
Step 6
Fill a pot with water and heat it until it’s boiling. Put a steaming rack inside the pot and place the dish on the steaming rack. Cover the pot with a lid.
Step 7
Steam on medium-high heat for about 6 minutes, then turn off the heat and let it simmer for 5 minutes.
Step 8
Garnish with soy sauce, sesame oil and spring onion.
Step 9
Serve hot as a main dish or a side dish with rice.
