Step 1
Crack egg in a small bowl to whisk, add room temperature chicken stock to mix in. Filter egg batter with a mesh strainer to remove egg residues, so it will turn out silky and smooth when it’s steamed. Drop lard in the egg batter. Cover the bowl with cling wrap and poke a few holes in the wrap.
Step 2
Place the bowl in a hot steamer, steam for 15 minutes. Once steaming is completed, pour Yuzu Ponza soy sauce, sesame oil, chopped scallion and black pepper over steamed egg, serve warm.
