WARM QUINOA DATE AND APPLE SALAD WITH CREAMY TAHINI BALSAMIC DRESSING✨the perfect combo of savory bone broth quinoa, sweet dates, crisp apples, and nuts and seeds for extra crunch and flavor paired with a creamy tahini balsamic dressing that I want on everything! Ingredients: 1 1/2 cups quinoa 3 cups chicken bone broth (or chicken broth) 1 cup shredded kale 3/4 cup dates, chopped 3/4 cup apple, diced 1/2 cup hazelnuts, roughly chopped 1/3 cup pumpkin seeds Dressing: 1/2 cup olive oil 1/4 cup balsamic 2 tbsp tahini 1 tbsp dijon 1 tbsp nutritional yeast 1 tbsp honey Juice of 1 lemon salt and pepper to season Directions: Add your quinoa and broth to a small pot with a pinch or salt and bring to a bowl Reduce to a simmer, cover, and cook for 15-20 minutes until the moisture has absorbed then let rest for a few minutes and fluff with a fork While the quinoa is cooking, whisk together your dressing ingredients and chop up your kale, apples, hazelnuts, and red onion Assemble all of your ingredients in a large bowl and toss with your dressing Serve and ENJOY! Instructions
