Instructions
Step 1
Half the peppers and deseed them and then chargrill either on stove or under a grill
Step 2
Drain and rinse butter beans, put into serving dish
Step 3
Finely chop parsley, red onion and half the tomatoes. Put into dish with butter beans
Step 4
Drizzle with olive oil, lemon juice and lemon zest. Adding more to taste if needed. Mix thoroughly
Step 5
Cut grilled peppers into slices and mix into salad
Step 6
Season to taste
