Step 1
Grill courgettes and roast red peppers.
Step 2
Add slithers of red onion and peas (cooked).
Step 3
Add capers and cherry tomatoes.

Stir through peppery rocket, fresh basil and a good shaving of parmesan.

Dress with mustard, lemon and olive oil.

Add chilli flakes for heat if you like.
