Crock Pot Lasagna Soup

Ingredients
8 servings
1 poundground beef
1 pounditalian sausage
1yellow onion
chopped
3 clovesgarlic
chopped
2 teaspoonsdried basil
2 teaspoonsdried oregano
1 teaspoonsalt
½ teaspooncrushed red pepper flakes
8lasagna noodles
broken up into pieces
¼ cuptomato paste
4 cupschicken broth
28 ouncecan crushed tomatoes
2 cupsfresh spinach
optional
1 cupshredded mozzarella cheese
1 cupricotta cheese
parmesan cheese
for garnish
Instructions
Step 1
In a skillet cook together the ground beef, sausage, garlic and onion over medium high heat. Drain if necessary. Add to a sprayed crockpot.
Step 2
Add in the seasonings, tomato paste, chicken broth, and crushed tomatoes.
Step 3
Cook on low 2 hours
Step 4
Break up the lasagna noodles and add them in. Add in spinach if using. Cook another 30 minutes on high, or until noodles are soft and cooked through.
Step 5
Stir in the mozzarella cheese, add the ricotta on top and spoon into bowls
Step 6
garnish with shaved Parmesan cheese, additional ricotta cheese, if desired and chopped fresh parsley or basil
