Ingredients

2 Tbspground flax seed
or eggs

4 Tbspwater
to mix with flaxseed

1 ½ cupcane sugar
or jaggery syrup

½ cupwater
to mix with cane sugar or add to jaggery

1 cupoat flour
or tapioca flour

½ cuprice flour

¾ cupcocoa powder
or less

¼ tspsalt

½ cupvegetable oil
or olive

2 tspvanilla extract

¾ cupvegan chocolate chips
chopped & divided

¾ cupwalnuts
chopped & divided optional
Instructions
Step 1
Preheat the oven to 180c or 350F.
Step 2
Line an 8×8 pan with parchment paper.
Step 3
In a small bowl, whisk ground flax seed and 4 tbsp of water. Set aside.(This makes flax egg)


Step 4
In a sauce pan over medium heat, add cane sugar and 1/2 cup water. Stir to combine until the sugar has dissolved, then remove from heat.(This makes simple syrup)


Step 5
In a large bowl, add in the flour, cocoa, and salt. Whisk together.




Step 6
Add simple syrup, add it along, oil, vanilla, and flax egg. Combine with a spatula just until combined. Do not overmix.






Step 7
If adding walnuts, add now along with 1/2 cup vegan chocolate chips. Fold to combine. Do not over mix.


Step 8
Pour batter into a greased pan. Top with remaining 1/4 cup chocolate chips and walnuts.
Step 9
Bake for 35-40 minutes A toothpick may not come out clean since they are fudgy.
AIR FRYER: CAKE 160C / 25min
Step 10
Remove from the oven and let cool for 10-15 minutes. Slice in 16 equal-sized pieces (or desired size)

Store in an air tight container.

Sugar Sub: Cane sugar can be substituted with brown sugar. I use Piloncillo or jaggery
Also 1/2 cup of Jaggery Syrup or other liquid sweetener can be replaced instead of 1.5 cups of sugar powder

Oat Flour Sub: Replace 1 cup of oat flour with 3/4 cup of tapioca flour.
Step 14
Oil Sub: Coconut oil can replace vegetable oil 1:1
