Instructions

Step 1
Mix the flour for the dough and the salt together in a mixing bowl. Take your cold cubes of butter and rub them into the flour, being careful not to overwork. Add ice cold water and mix until a dough starts for form. Once everything is mixed, divide mixture in two, wrap in cling film or baking paper, the refrigerate for at least two hours. Remove from the fridge 10-15 minutes before rolling out.
Step 2
In a mixing bowl, add apples, brown sugar, and granulated sugar, cinnamon, flour, lemon juice, and vanilla. Mix everything together and set aside.
Step 3
Preheat oven to 450 degrees. Put one ball of your dough onto a floured surface, and sprinkle with more flour on top. Roll out to about 1/8 inch thick. Repeat with the other ball of dough.
Step 4
Press one crust into a pie tin, about 7.5 inches in diameter, with some crust hanging off the edges.
Step 5
Add apple mixture, along with some slices of butter on top.
Step 6
Cut your other dough circle into strips about an inch wide. Make a lattice by layering strips in a basket weave style. You can also just add the dough on top without cutting into strips, but I like the lattice for a classic look. Trim the edges of the crust to fit the pan.
Step 7
Brush with the egg wash, and sprinkle with some sugar. Bake for 15 minutes on the middle rack, the lower heat to 400 degrees and move to the bottom rack for another 15 minutes, then back onto the middle rack for about 12 minutes. Be sure to keep an eye on it, as all ovens are different.
Step 8
Serve with ice cream, and enjoy!
