For the pie crust
Step 1
Mix flour salt and sugar in a large bowl then add cold cubed butter and rub the mixture together until it looks like wet sand .

Slowly add the ice cold water and stir the dough until it clumps together .

Cut the dough in half then form two discs and wrap in plastic wrap. Chill in the fridge dog e for 1 hour minimum .
For the filling

Use mixed apples for better flavor . Peel and slice apples into slices add to a large bowl then squeeze lemon juice all over and give it a good mix .

Cover the apples in sugar cinnamon nutmeg and flour and mix well .

To assemble

Roll out the dough then put one half in a greased 9 inch tart or pie dish trimming off any overlapping bits

Add the apples to the centre making sure to add the juices left over on top then place the other layer of pastry on top and trim the excess

Use a fork to make indents in the outside then prick the centre of the pie with the fork to let steam escape
Step 9
Brush with egg wash and sprinkle a little more sugar on top of you like . Bake in a 220 c 425 f oven for 15 minutes then lower the heat to 175 c 350 f and bake for another 35 minutes or until golden. Let the pie cool down then serve with a lovely scoop of vanilla ice cream. Enjoy !
