Instructions

Step 1
Get the crust ready: Put the sugar, salt, and flour in a big mixing bowl. Using a pastry cutter or food processor, add the cold, cubed butter and pulse until the mixture resembles coarse crumbs. One spoonful of ice water at a time should be added gradually until the dough comes together. Split the dough in half, roll into discs, cover with plastic wrap, and chill for at least an hour.
Step 2
Get the filling ready: Slice the apples thinly after peeling and coreing them. Combine the apple pieces, flour, granulated sugar, brown sugar, nutmeg, cinnamon, lemon juice, and vanilla essence in a large bowl. Put aside.
Step 3
Put the Pie Together: Set the oven temperature to 375°F, or 190°C. On a floured board, roll out one disc of dough to the size of a 9-inch pie dish. Trim the edges of the dough after transferring it to the dish. Evenly distribute the apple filling into the crust. Place the second disc of dough over the filling once it has been rolled out. To seal, trim and crimp the edges. To let the steam out, make a few slits in the top crust. Brush the egg wash over the top crust after whisking the egg and milk together.
Step 4
To catch any drips: Place the pie on a baking sheet before baking. Bake for 50–60 minutes, or until the filling is bubbling and the crust is golden brown. Before serving, allow the pie to cool for at least two hours.
