Instructions

Step 1
Sift the flour into a bowl and add the vanilla essence, lemon zest and baking powder
Step 2
Slowly add the milk until you have a soft firm but not sticky dough leave the dough to rest for half hour in the fridge
Step 3
Roll our dough into square about 30cmx30cm. Leaving a border of about 2.5cm at the edges spread the jam over one side of the dough. Brush the border with egg.
Step 4
Roll it up. You can pinch edges to keep the jam I if needed.
Step 5
Roll up the pastry roll in greaseproof paper, then wrap in a double layer of tin foil. Pinch edges so it's waterproof as possible
Step 6
Place on a rack above simmering water. Cover the tin over with tin foil and bake for about 2 hrs at 150 degrees. Top up the water in the tray about every 30mins.
Step 7
Eat with custard!
