Instructions
Step 1
Mix the breadcrumbs, grated cheese and parsley in a dish. Crack the egg into a cup
Step 2
Put baking paper into the tray and drizzle with oil (sunflower or rapeseed oil)
Step 3
Add the fish and immerse in the oil (both sides)
Step 4
Add salt (both sides)
Step 5
Pour the egg. Ideally you should do this in a seperate dish and then transfer to the tray
Step 6
Sprinkle the breadcrumb mix on either side of the fish (mostly/more on the top side). Drizzle with oil
Step 7
Put the tray into the oven at 180°C until golden in appearance (45 mins). The potato wedges (baking paper, oil, salt and Italian herbs) take 1 hour (put in the oven earlier)
